My boyfriend’s birthday is coming up and everyone in his family seem to be allergic to something. I would love to be able to make a cake his who family can enjoy. I’m new to this way of thinking, cooking and eating, but excited to try it if I can feel better. The only personal recipe my family seems to not want to let go of is banana bread. Are there easy substitutions I can make in the traditional recipe?

I had a challenging time during the 7 years of recipe development in writing my cookbook. Banana Bread is not in there because I need to experiment more with other recipes. I’m sorry that I cannot give you an answer. However, I can recommend another cookbook Simple Treats by Ellen Abraham which I love. Best of luck. Happy baking. I just received your cookbook in the mail and tried out your chocolate chip cookie recipe. All my kids loved them and said they taste like ‘real’ chocolate chip cookies. We have been wheat free now for over five years and I was so excited to find a simple recipe that did not crumble and that got all four of my kids excited. Thank you so much!

Yes, 1 Cup of Chili powder is correct. It will not be too hot(the heat is in the cayanne pepper or ancho chili powder which calls for much less). The Chili powder acts as a thickener as well as flavor. Enjoy it and let us know how you like it. Glad you love the cookbook-thank you for purchasing it. Lauren, I have just received your cookbook and I am so excited. I am sensitive to wheat and lactose intolerant and I have finally decided to adjust my diet to accommodate these restrictions and I must say I feel 100 times better. But I wondered if I could replace the oat flour in your baking recipes with any other flour. I look forward to any new recipes that you come up with!
You can also use Barley flour if you are not gluten sensitive or have Celiac’s Disease. I encourage you to try the Oat Flour since it is very high in fiber, heart healthy and high in beta-glucan which boosts the immune system. It has a lovely sweet flavor and many other flours can have a bitter taste. Let us know how you do.
